Get your papers today!

If you don’t subscribe to your local paper, be sure to go out today and pick up a paper…or two, or three! Because today there are FOUR coupon inserts! That is a lot of coupons my friends!
I managed to save 80.00 on my last grocery shopping trip combining my coupons and sales and club card savings at Safeway, that is the largest dollar amount for me since I started using coupons! Wish I could do as well as the Krazy Coupon Lady, but im not quite there yet, working on it!
Also, be aware that at Target you can print lots of great coupons from their website and if it is a Target store coupon you can stack a manufacturers coupon for the same item and use 2 coupons on 1 product to maximize your savings. I know a lot of people might not think to grocery shop at Target thinking it would be too expensive, but with a bit of prior planning, there are many great deals to be had at Target!
So, get thee to the store and purchase those papers…Happy Savings! and Happy eating IN 🙂

One of my all time Favorites!

I made one of my all time favorite recipes tonight for dinner and every time I make them I fall more and more in love with them!
I can’t remember where I originally found this recipe, might have been from Paula Dean, or one of my southern relatives… either way, I love it and it is SO yummy and extremely easy!
Maybe you all can try it out too, but be warned, they are addictive, you can’t eat just one, and you will crave them often!

Sausage Balls

1 Roll of breakfast sausage, I prefer to use Jimmy Dean but any brand will do.
2 cups of Bisquick
2 cups of shredded cheese, best if you get a brick of cheddar and grate it yourself but you can use bagged as well.
1 beaten egg to help hold it all together

Set oven to 375 degrees. Put 1st 3 ingredients in a large mixing bowl, beat your egg in a separate dish and then add to other ingredients…roll up your sleeves and mix all ingredients together with hands, make sure to work everything together well.

Pinch off a bit and roll into a ping-pong ball sized portion (like my technical measurement terms there?), not too big not too small, use your own judgement.
Line your baking pan with parchment paper and lay out the balls on your pan careful not to have them touching and bake for 10 min. then turn them over and bake another 10 min.
You can check the internal temp to be sure they are at 160 if they aren’t just pop them back in the oven a few minutes.

I enjoy these with BBQ sauce and a mayo & mustard sauce I mix up…just mayo and yellow mustard mixed together, a bit more mayo than mustard.

These are really great to make for potlucks or on football game day! Would be great at a Super Bowl party!

Slow Cooker Love

I made THE most delicious pork roast the other night for dinner, seriously, THE most delicious ever! and almost as good as the taste was that it was nearly effortless on my part to pull off this amazing meal for my family because of one of my most favorite kitchen tools ever… my slow cooker ( or crock pot, whatever it is you wanna call it!).

It had actually been a long time since id used my slow cooker and I have no idea why, because each and every time I use it I fall more in love with it! It makes preparing delicious meals so very easy, and when it comes time to clean up (my least favorite part of cooking) there is only 1 cookware piece to clean and that is if you didn’t use a crock pot liner, another item that I love!

If you are a busy mom like me, or even just a lazy one (also like me), then the slow cooker can be a life saver, freeing up your time so you don’t burn it all up slaving over a hot stove or washing multiple pots and pan in addition to all your other dirty dishes.

My roast was so easy its ridiculous… just choose your roast of choice, make sure its defrosted and plop it in the cooker, salt and pepper it, add about a bottle of BBQ sauce of your choice, put the lid on, turn it to high and forget it for the next 4 to 6 hours!  Seriously, does it get much easier than that to prepare a fresh, delicious, home made meal for your loved ones? I think not!

Also, if you are at a loss for a variety of recipes to prepare in your slow cooker, check out this amazing blog that was written by a mom who used her crock pot EVERY day for an entire year! I love how she presents the recipes, she lists the ingredients AND shows a picture of them, and she gives a verdict of how her family liked the meal…I love this blog SO much!  She has even written a book which id love to have in my cookbook collection.

Also… don’t forget about the Pantry Challenge! Get in those pantrys and clean them out, throw out all the old expired food, throw out all the junk food that’s bad for you, use up all those goodies that are hiding on those back shelves! I’m happy to report I found FOUR jars of spaghetti sauce that I didn’t know I had, which is great because ive got more spaghetti noodles than I know what to do with. I guess im off to cook dinner now… Spaghetti & Meatballs 🙂

My newest kitchen tool

I can not wait to try out my newest kitchen tool that came in the mail yesterday evening, I’m so excited to experiment with it! What is this new toy of mine you may be asking? A doughnut baking pan!!!
Now, I can prepare my own delicious (hopefully) doughnuts at home for a fraction of the cost of getting gourmet doughnuts from a bakery and probably cheaper than your standard Dunkin’ Donut as well… I know they will be healthier at the very least because I can control the ingredients I use and I can bake them instead of deep frying them like most doughnut shops do!

I also got a really great doughnut cookbook so I can experiment with making all sorts of  different sweet treats! I especially like that there are gluten free and vegan recipes included, so now maybe I wont feel so bad about giving my kids doughnuts!  I will be sure to report back to all of you with how it turns out after I make my first batch… and it just so turns out that I have all the ingredients on hand in my pantry to make the spice cake doughnut recipe! So my pantry challenge is off to a good start 🙂

Pantry Challenge

I don’t know if any of your pantries look like mine (not my pantry above but mine looks about the same), but if they do then they are in serious need of organizing and you most likely have no clue what could be hiding on the backs of the shelves.
These days when I open the door all I see is food clutter, definitely not meal ideas!
This is why im taking up Fishmama of www.goodcheapeats.com  on her pantry challenge for the month of January.
Essentially what the challenge is asking you to do is to use up what you already have in your kitchen pantry and to limit your grocery shopping during this time to just fresh produce, milk, bread and such. Many of us have the makings of great meals hiding in our pantries not getting used, things like rice, noodles, soups, canned veggies, sauces, ingredients for baking from scratch and more…so lets do this! Lets see how much of that food clutter we can put to good use, lets roll up our sleeves and get in those pantries, clean them out and see how many meals we have just sitting in our kitchens waiting to be prepared!

A new year, a new challenge

Welcome to my new years resolution! That is essentially what this blog is, a resolution, a challenge to myself to get it together and do more at home in the kitchen instead of throwing away so much money on eating out or ordering in.
I never stopped to think how much we were spending on all our eating out until recently, I never did a monthly budget, never accounted for exactly how much of our income was going to restaurants, letting them do the same thing that I could do if I weren’t being so lazy about it all the time…or staying too busy!
I’m on a mission to get our finances under control and to get us out of debt once and for all. One of my goals is to eat at home way more than we have been over the past few years, I want to eat at least 90% of our meals at home and keep our going out down to only once a month…if that!
I’m going to need a lot of support to make this happen! That is where all of YOU come in…read my blog, visit often and keep me honest and on track!
While helping myself and my family and documenting it here, I hope to be helping all of you as well. I plan to share all of the tools and resources that I use with all of you readers…and I hope that if you all have great resources that you will share with me, especially if you have a blog on a similar topic…id love to showcase other blogs from time to time and share all of the other amazing blogs out there that can help you save money and make more homemade meals.
So stay tuned for much more to come in the coming weeks, and I hope you enjoy watching my journey and that maybe some of you will join in this challenge with me!
